Our Current Dinner Recipe Rotation (1)

Over on my Instagram I often share stories about the dinners I make, as well as my weekly meal prep each Monday.Last week I asked if you guys would be interested in a blog post about our current dinner rotation, and I got an overwhelming response that yes, you wanted to see that!

Over the past year or so I’ve come up with a recipe rotation that consists of our favorite recipes. Some of these are recipes I’ve come up with, and others I’ve found on Pinterest. I’ve bookmarked these recipes and saved them to a folder on my phone.

At the beginning of the week I sit down to meal plan for the week ahead and I pick from these recipes. I usually try to find one or two new recipes from Pinterest to try as well so that I can mix things up. If we like the new recipe enough, I’ll add it to the rotation.

Our Current Dinner Rotation

Honey Lime Chicken Enchiladas from Jess Fuel:I love this twist on enchiladas! During my meal prep each week I like to make some shredded chicken and this is a great way to use it.

Mississippi Pot Roast from The Country Cook: This is one of our favorite crock pot meals. Just throw a few easy ingredients in and you end up with the most flavorful pot roast EVER. I usually serve this one with mashed potatoes.

Chicken Club Lettuce Wraps from I Heart Naptime: This one is great for a low carb meal. The creamy dijion sauce is SO GOOD and brings all of the flavors together.

Cilantro Lime Chicken with Avocado Salsa from Yummy Healthy Easy: If you love cilantro, you have got to try this one! It’s so flavorful. If the weather isn’t good for grilling the chicken, I cook it in a skillet on the stovetop instead.

Greek Yogurt Parmesan Crusted Chicken from A Savory Feast: This dinner could not be easier! I like to serve it with a veggie like roasted broccoli or steamed green beans.

Baked Monterey Chicken from Love Bakes Good Cakes: I like this one because I almost always have all the ingredients in the house, so it’s an easy go-to.

Skillet Chicken with Creamy Spinach Artichoke Sauce from Cooking Classy: I’m a big fan of spinach and artichoke dip, so I love this one dish meal!

Cheesy Broccoli, Sausage and Rice Casserole from A Savory Feast: This is one of the all-time most popular recipes on my blog! It’s an easy, one dish meal. You can mix up the meat and make it with chicken as well.

Chicken Pot Pie from Two Peas and Their Pod: This is the BEST chicken pot pie recipe! It’s also a good way to use up leftover turkey after the holidays. I always have the ingredients in the house to make this pot pie and I usually make it once a week! I love having the leftovers for lunch the next day.

Fish Taco Bowls from My Cooking Spot: I used to contribute to My Cooking Spot and this is one of the recipes I shared over there. These bowls are so healthy and packed with yummy ingredients.

Healthy Crock Pot Pulled Pork from The Clean Eating Couple: Basically everything from Liz over at The Clean Eating Couple is amazing! I love her recipes. They are so healthy and easy to make, too.

Pork Egg Roll in a Bowl from Peace, Love and Low Carb: This is another low carb favorite that is packed with veggies. This is a good one to make ahead for my husband’s lunches, too.

Italian Sausage Alfredo Stuffed Shells from A Savory Feast: This meal takes a little bit of prep work, so whenever I make it I like to double the batch and freeze half to have on hand for an easy meal another night. It freezes great!

Side Dishes

I usually keep a variety of fresh and frozen veggies in the house, as well as rice, pasta and potatoes. Some of the dinner recipes I make are all-in-one dishes that include meat, veggies and a carb. If not, I’ll choose a vegetable to serve along with it.

Crispy Sheet Pan Roasted Potatoes from The Clean Eating Couple: These potatoes are addicting! They go with so many different meals and are so easy to make.

No-Knead Skillet Rosemary Rolls from A Savory Feast: I love making these rolls to go with an Italian pasta dish. They are so good dipped in a mixture of olive oil and Italian spices.

Parmesan and Herb Cream Biscuits from A Savory Feast: Whenever I have leftover heavy cream in the house from making another recipe I like to make these cream biscuits! The texture is amazing.

Get Started With Meal Planning

Creating a list of favorite dinner recipes like this can make your meal planning so much easier! I created a folder on my phone to save these recipes so I can pull them up easily when I’m meal planning, grocery shopping or getting ready to cook dinner.

Meal planning saves our family lots of money. See how meal planning helped me save $200 a month! I also have some free meal planning printables you can snag to help you get started.

Another way I make dinners easier is by taking a couple hours on Monday to meal prep for the week. You can read all about how my meal prep day works here.
